Husband and I got down and dirty in the kitchen last night and again, we tried something new!
Huevos Rancheros from Skinnytaste.
I was a little hesitant because it was no where close to a "meat and potato" meal for the man but...he really enjoyed it. I also got home a little late from spin class and this was SUPER easy and QUICK to whip up!

Because we have so many leftover tortillas, tomorrow night we are going to give the Crock Pot Salsa Verde Chicken a shot! I will let you know how it goes!
